Our special Aleppo pepper is grown in Aleppo, Syria, thus giving it its name. Also known as Halaby pepper, theses farmers in Syria have preserved their ancient techniques on making these pepper flakes which include sun-drying, milling into a flake, and adding a slight touch of salt and oil for preserving and fermentation.
Due to the war torn city of Syria, true Aleppo pepper has been difficult to find and there are many imitations on the market from other middle eastern nations. The Aleppo pepper has a Scoville scale rating of 10,000 Heat Units which gives this fruity pepper some nice heat. Aleppo pepper is a staple in all Mediterranean cooking and is typically used sparingly on hummus, salads, sauces, soups, and marinades.
